Raw 811 spaghetti Bolognese!

Yumyum, this is so good. It reminds me of spaghetti bolognese, since the sauce  is thick and very tastefull. It is simple and overtfree, give it a try!

For one person:
1-2 zucchinis, spiralized
3-4 springonions chopped
dill

sauce: 3-4 mangoes, approx 70 gr unsalted sundried tomatoes, rehydrated. Blend in foodprocesser.

It is as simple as that! Enjoy

Raw Vegan Creampea lasagne

Mmmh, this lasagne is the king of my recipes! It wins every time. I have even made it for my meateating grandparents and they loved it! It is really simple.



What you need is following for 1 person:

lasagneplate:
1-2 squash
2 lime
3 springonion

Cut squash thinly with a mandolin and put in limejuice with springonion in the fridge for some hours.

Creampea:
1 small avocado, 100 gr peas fresh, 2-3 dates

Blend all together in the foodprocessor. I like it when it is a little crunchy, not to smooth.

Then you start with a layer of squash, then the cream, sliced organic tomato and fresh dill and  build it up as far as you wish. Enjoy! Simple, raw, healthy, delicious. Be sure to make it with love.

Raw 811 burger



Yeah I know what you are thinking :D ... Burger?! But damn, it tasted good! I got the inspiration from raw vegan astanga and recipe goddess Lindsay Culclasure at the 811 retreat in Chanthaburi, I attended some weeks ago. But here is raw burger ala Cecilie.
I apologize for the poor quality of pictures, a good camera is on my wihslist :)

Burger patty:
1-2 Beetroot
1-2 carrot
4-6 sundried tomato
4-6 shitake mushroom
cilantro
3 springonion

grate beetroot and carrot and drain all the fluid from the grated legumes.
Add the rest of the ingredients to the food processor and mix. Mix all and form patties with your hand. If you want, you can add some nuts, to make it more rich, but I keep it out to make it as low fat as possible :)

ketchup:
tomato skin and flesh, but not the fluid with the seeds from 4-6 tomatoes
sour tamarin (do not use to much of this, it is really sour!)
2 springonion
1-2 dates

mix in foodprocessor! Yum I used to be such a ketchup addict, this really does it for me! It might be a little sour, but one you mixh with the mayonaise, that is sweet, it just matches perfectly!

mayonaise:
1 avocado
2-4 dates depending on size
2 springonion

mix in food processor 'til creamy!

Use iceberg leaves as buns and use whatever veggies or fruits you'd like to put in!

Rawlicious, crueltyfree TACO!

yumyumyum! My best raw 811 creation so far. It is OIL- and SALTFREE!
It is a very fast and easy recipe and the ingredientlist belov is for 1 person.

Look at theese beauties <3
Ingredients needed:
Tacoshell: romaine leaf or kale leave. I used purple kale to make a little more artistic.

You simply just use the leaves. Use as many as you wish. Who ever said raw was difficult ;)

"Better-than-meat": 4 carrots, 4 spring onion, 15-20 gr walnuts or brazilnuts, 3 sundried tomato (can be bought salt free, but if you can't find them, just soak them in water for 24 hours and they are basically salt free)

Put all the ingredients in the food processor and blend til wished texture.

Salsa: 3 big ripe, sweet, sunny tomatoes, 1 clove garlic (optional), 2 sundried tomato, cherry tomatoes

Blend tomatoes, garlic and sundired tomato, till smooth texture. Cut the cherry tomato in small pieces and add.

Gaucamole: 1 ripe avocado,  ½ clove garlic, a tiny bit of limejuice

Mash the avocado with a fork and add the rest.

Fillings: fresh corn, tomato, cucumber

ENJOY!!



In the background you see my friend eating her vegan cooked noodle. She was so jealous of my food and I could feel her looking at it all the time ;) Compare the colours. Mine is rainbow, hers is... brown and grey. Alive vs. dead!
